Christmas Wreath Coffee Cake

  • 1 and 1/2 cup sifted cake flour
  • 2 and 1/2 tsp. baking powder
  • 1/2 teaspoon salt
  • 1 large egg - slightly beaten
  • 3/4 cup sugar
  • 1/3 cup shortening - melted
  • 1/2 cup milk
  • 1 teaspoon vanilla

  • For The Topping:
  • 1/2 cup brown sugar - packed
  • 2 Tablespoons cake flour
  • 3/4 teaspoon cinnamon
  • 2 Tablespoons butter or shortening
Sift together flour, baking powder, salt. Combine remaining ingredients. Stir all at once into flour mixture just until blended.

Combine sugar, flour, cinnamon; cut in butter or shortening until crumbly.

Preheat oven to 375 degrees F. Place half of streusel in greased 1 quart ring mold; top with half of batter. Repeat layers.

Bake for about 30 minutes.

Cool 10 minutes in mold. Invert on wire rack; cool. Drizzle with confectioners' glaze and decorate.


'Tis better to put this one in your belly than on the door. A tasty coffee cake with a cinnamon and brown sugar streusel topping.

I used eggnog instead of milk, added walnuts to the struesel. It came out great. My son doesn't like eggnog and he enjoyed this. I would name this "Eggnog X-mas Wreath Cake".
