Paluszki (Polish Little Fingers)

  • 1 pound butter
  • 1 pound dry cottage cheese
  • 4 cups all-purpose flour
  • 1/2 teaspoon vanilla
Put cheese through grinder, Mix with soft butter and flour, first cutting with knife, then lightly kneading. Make little balls the size of walnuts and set in refrigerator over night.

Roll each ball until very thin. Fill with any of the following mixtures: cottage cheese, dates, prunes, poppy seed, or thick jam. Seal edges and make small rolls. Bake in 350 degree oven until light brown, about 15 minutes. Sprinkle with powdered sugar.


To say "Good morning" in Polish, say "Dzien dobry" (pronounced dzhehn dobri).

Farmer's Cheese and dry cottage cheese are the same thing. It's usually easier to find under the name Farmer's Cheese.
