Refrigerated Raisin Bran Muffins

- 2 1/2 Cup Whole Wheat Flour

2 T Baking Soda

3/4 tsp Salt

3 Cup All Bran cereal
-
1 Cup Boiling Water
-
2 Eggs -- Beaten
-
2 cups Buttermilk
-
1 1/2 Cups Sugar
-
1/2 CUp Cooking Oil
-
1 1/2 Cups Raisins
In a mixing bowl stir together flour, baking soda and salt. Set mixture aside. In a small mixing bowl place 1 cup of bran ceral.
Pour boiling water over cereal. Set aside. In a large mixing bowl combine eggs, buttermilk, sugar, cooking oil and remaining bran cereal. Add flour mixture to egg mixture.
Stir until moist. Add soaked bran, stirring to combine. Fold in raisins. Transfer batter to a covered container. Refrigerate overnight, or up to three days.
TO BAKE: Spray muffin tins, with nonstick cooking spray. Spoon batter into tins, filling to 2/3 full capacity.
Bake in a 400 degree oven for 15-20 minutes, or until tops spring bake, when lightly touched.

Bran muffins are both tasty and an excellent, healthy source of fiber.
