Irish Eggs

  • 2 Tablespoons butter
  • 6 medium potatoes - peeled and sliced
  • 1 small onion - minced
  • 1 medium green bell pepper - chopped
  • 6 large eggs - beaten
In a large skillet, melt butter over medium high heat. Add potatoes, onion and green pepper; saute until potatoes are browned. Stir in eggs and cook until eggs are set. Serve warm


A melange of potato, onion, green pepper and eggs.

I was trying to make something new and intresting for my husband . I was trying to find something I had all the ingrediants for in my house. This recipe was perfect and easy. Some variations I used for this recipe included Onion salt , Allspice seasoning for the egg batter from McCormack. I always love to use a little bit of taragon in eggs (Powdered for made in mortal and pestal) So this recipe is great for any potatoe lovers in the house. Both of us are Irish!
