Banana Lemon Pancakes

Banana Lemon Pancakes
(4 servings)    Printable Version

  • 2 Tablespoons sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon grated nutmeg
  • a pinch of salt
  • 1 and 1/2 Tablespoons lemon juice
  • 1 pound ripe bananas
  • vegitable oil for frying
  • 2 Tablespoons margarine - melted
  • icing sugar - as desired
  • lemon wedges and banana slices for garnish
This is a recipe for a crepe filling or a pancake topping. For a good, reliable crepe recipe, click here. For a well-reviewed basic pancake recipe, click here.

Mix the sugar, nutmeg, salt & lemon juice in a small bowl.

Slice the bananas & mix them gently in the lemon-spice mixture. Heat a skillet & add a little vegetable oil.

Fry each crepe on both sides. Spread each cooked crepe with the melted margarine & some of the banana mixture.

Keep everything warm until ready to serve. Sprinkle the crepes with icing sugar and garnish with lemon wedges and banan slices.


A banana a day keeps the doctor away.

Haven't tried it yet because I think you missed the main ingredient (flour!) - wanna try again?? Otherwise, the recipe sounds delicious!!!!
