Cinnamon Griddle Cakes

(4 servings)    Printable Version
  • 3 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 Tablespoon cinnamon
  • 2 Tablespoons shortening
  • 1 to 1 and 1/2 cups milk (see note below)
  • 1 large egg - beaten
Mix and sift all dry ingredients together. Add beaten egg, melted shortening and milk. Mix and beat well.

Cook on slightly greased hot griddle until both sides are golden brown.

Serve warm with softened butter and maple syrup.

Fun Side Note:
This recipe is also known as "Sekac Elddirg Nomannic"... to dyslexics. Zing!

I agree with Harry. Needs more milk and I cut the baking powder by a teaspoon. Definitely not the best recipe on the site. Just okay.

I tried this recipe this morning using the exact measures of ingredients and the batter came out too thick. I added about one-half cup of milk and the batter was better. I didn't want to add any more because I didn't know how it would change the taste. The griddle cakes tasted fine albeit heavy. It seems three cups of flour is a lot for one cup of liquid.
