Ham And Wheat Griddle Cakes

Ham And Wheat Griddle Cakes

(4 servings)    Printable Version
  • 2 and 1/2 cups wheat flour
  • 4 teaspoons baking powder
  • 3/4 cup boiled ham - chopped but not too fine
  • 1 large egg - beaten
  • 1 cup milk
Mix together wheat flour, baking powder and chopped ham. Stir in milk and well beaten egg. Mix and beat well. Cook on slightly greased hot griddle until both sides are nicely browned.

This recipe requires no salt or shortening on account of the fat and salt content of the ham.

Simple whole wheat pancakes with chopped ham inside. Great when topped with a poached egg (or any kind of egg).

I made these per the recipe and they were as thick as biscuit. I thinned it out with milk so that it would be a more traditional pancake thickness but they still had no flavor. We did not even finish eating them. I was hoping to have two awesome breakfasts this weekend for Valentine's Day but this one is less than awesome. My husband just recommended country gravy for them. That may have made them better.
