Autumn Pancakes with Spiced Apples

  • 1 package (10 ounces) frozen Cooked Winter Squash - thawed in refrigerator overnight or for 12 hours
  • 2 large eggs
  • 1 and 1/4 cup milk
  • 1 and 1/2 cup all-purpose flour
  • 1/4 cup sugar
  • 1 Tablespoon baking powder
  • 2 teaspoons cinnamon
  • 1 can (21 ounce) Cinnamon and Spice Apple Pie Filling
In large bowl, blend squash, eggs, and milk.

Sift together flour, sugar, baking powder, and cinnamon; add to squash mixture stirring just until blended but still slightly lumpy.

Pour about 1/3 cup batter onto a hot, lightly greased skillet and cook until golden brown.

Makes about 12 pancakes.

Heat pie filling in microwave 2 to 3 minutes on HIGH; stirring halfway through. Serve hot over warm pancakes.
