Mound or pipe 2 heaping tablespoons cheese mixture down center of crepe. Fold sides around filling and place in 9x13 - inch greased pan. Brush tops with melted butter. Bake in preheated 400°F oven for about 10 minutes. Heat over medium heat until mixture thickens and bubbles; stirring constantly Serve over warm crepes. Fruit topping: Mix together orange juice and cornstarch in small bowl then place in saucepan; add fruit. A great breakfast with a mixed fruit and orange juice topping. I am a Chef for a retirement community and we all love the blintzes. They are a little tedious to make for 200 people, but well worth the time and effort.
