Ham, Egg & Vegetable Hash Ring

  • 1 Tablespoon vegetable oil
  • 3 cups frozen country-style hash brown potatoes
  • 1 medium onion - chopped
  • 1 cup cubed cooked ham
  • 1 package (10 ounces) mixed vegetables - cooked according to package direction
  • 4 large eggs
  • 1 cup milk
  • 2 Tablespoons Cheddar cheese
  • salt and pepper to taste
Heat oil in skillet over medium heat; add potatoes and onion; cook until edges of potatoes are crispy and brown stirring occasionally.

Stir in ham and vegetables.

With a spatula, push potato, ham, vegetable mixture toward edges of skillet to form a ring.

In a medium bowl, combine eggs and milk with a fork or wire whisk.

Pour egg mixture into center of skillet; cover and cook until mixture begins to set on the bottom.

Using spoon, lift and stir egg mixture and continue cooking until eggs are cooked throughout but still moist.

Serve hot.


Scrambled eggs in a flavorful ring of potatoes, ham and mixed vegetables. Nice presentation in the skillet.
