Applesauce Oatmeal Muffins

Applesauce Oatmeal Muffins

(10 servings)    Printable Version
  • 1 cup flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup brown sugar
  • 1/4 cup oil
  • 2/3 cup applesauce
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup rolled oats
  • 1 large egg
  • 1/3 cup milk
Preheat oven to 375 degrees, prepare pans. Mix dry ingredients well with a fork.

Beat egg, then add oil & milk, stir in applesauce. Add the dry mix to the wet mix until just combined.

Spoon into pans & bake for 20 minutes or until cooked.

Remember the Brady Bunch where Peter Brady kept saying "Poke Chops and Apple Shause!". That wasn't as funny as a lot of people made it out to be. This recipe uses applesauce for sweetness and flavor.

I added more cinnamon, used 1/2 cup whole wheat flour with 1/2 cup white and added 1/4 cup ground flaxseed meal and raisins (add a bit more applesauce to give mositure). The kids liked it.

Hi Katao - I agree. That's a lot of powder. I'd drop that amount to 1 teaspoon. I'll try to get in touch with the submitter and see if they made a misprint. If anyone tries this recipe with the reduced powder, let me know how it goes. Thanks!

Too much baking powder--they have a baking powder after taste.
