Nova Scotia Blueberry Muffins

(12 servings)    Printable Version
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 1/2 cup butter - melted
  • 1 cup blueberries (fresh or frozen)
Stir dry ingredients together and add blueberries. Combine egg, milk, and melted butter. Add to blueberry mixture, stirring just to moisten. DO NOT BEAT.

Bake at 375 degrees for 20 minutes. Add 5 minutes for frozen berries.

A great breakfast lover from Nova Scotia named Susan wrote in regarding the index finger myth (see below) saying:

"I was bred, born and raised here and have never ever heard of this index finger thing. We are famous for our rolling blueberry barrens and are one of the worlds largest exporters of wild blueberries, and have been known to make use of our fingers for eating lobster in particular. Not to mention the use of one in particular to communicate certain feelings but I am sure that is a universal signal known far and wide. I would be fascinated to find the source of this myth, as I'm sure there are other gems of the sort to be heard."

The texture was lovely but the buns were not sweet enough. Very easy to make. Will make again but with added sugar or perhaps brown sugar in addition to the white.

This is classic and very good! I baked muffins on Marthas Vinyard in Childmark with fresh berries in season, whatever!! What a job, to love!!! Chilmark and fresh berry muffins from local growers!!!! Yum!! Sally
