Pickles' Griddlies

  • 1 and 1/2 cups all-purpose flour
  • 2 Tablespoons sugar
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 and 1/2 cups milk
  • 2 large eggs
  • 3 Tablespoons unsalted butter - melted
  • 1 Tablespoon vegetable oil
  • 2 teaspoons vanilla
Preheat griddle or skillet over medium heat. As you cook watch the heat to avoid burning.

In large bowl, mix flour, sugar, baking powder and salt. Set aside.

In another bowl, beat the eggs and milk together, then beat in the butter, 1 Tbs of oil and vanilla. Add flour mixture and mix until just blended and smooth.

Brush griddle with vegetable oil to coat well. For each pancake, pour 1/4 cup of batter onto griddle. Let cook until cakes are covered on top with bubbles.

Turn and cook about 2 minutes more. Serve immediately with butter, syrup or fruit toppings.


Good ol' regular pancakes with extra vanilla flavor. You can add a few gratings of nutmeg or a pinch of cinnamon to the dry ingredients for even more flavor.

Best pancake recipe EVER!!! It tastes better than Denny's or Ihop pancakes! LOVE it! Also, it makes a lot of batter, so great for hungry teens staying overnight! :-)))
