Breakfast Pie

  • 8 slices of bacon - cooked and crumbled
  • save 1 Tablespoon of the bacon drippings
  • 1/2 cup Kellogg's Corn Flakes cereal - crumbled
  • 5 large eggs
  • 2 and 1/2 cups of frozen hash brown potatoes
  • 1 and 1/2 cups of shredded Swiss cheese
  • 1/2 cup of cottage cheese
  • 1/3 cup of milk
  • 1 green onion - chopped
  • 1 teaspoon pepper
  • 4 drops of liquid pepper sauce
Mix corn flake crumbs with drippings and set it aside.

In medium bowl, beat eggs until foamy. Stir in remaining ingredients. Pour into greased 9-inch pan. Sprinkle crumbs mixture and bacon on top and cover. Refrigerate overnight.

Remove pan from refrigerator. Uncover and bake at 350 degrees F about 50 minutes or until knife inserted near center comes out clean.


You can make this the night before and then put it in the oven when you first wake up. Secret ingredient: corn flakes breakfast cereal.

I had this recipe years ago. Have made it for every xmas morning. I lost the recipe and as the years went by, just kept winging it. I decided to search and here it is. It's awesome to prepare the night before, and pop in the oven while the kids are opening presents. When they are all done, so is breakfast!!
