Basic Breakfast Nachos

  • 3 large eggs
  • 1 Tablespoon milk
  • 1 Tablespoon butter
  • 20 to 25 restaurant style tortilla chips
  • 1/3 cup grated Cheddar cheese
  • 1/4 cup grated Pepper Jack cheese
  • 1/2 small tomato - diced
  • 1 Tablespoons canned chopped jalapeno - optional
  • 2 Tablespoons sliced black olives - optional
  • 1 Tablespoon chopped green onion - optional
  • salsa and sour cream - for serving
This is a very basic recipe for breakfast nachos. To make them deluxe, consider adding sausage, bacon or both. For sausage, brown and crumble 1/4 pound sausage and add the egg mixture to the sausage and scramble as directed. For bacon, fry 2 or 3 slices until until very crisp and them crumble it and scatter the bacon on top of the completed nachos.

How To Make Basic Breakfast Nachos

Prepare the eggs:

Beat the eggs with the milk (and a sprinkle of salt and pepper if desired). Place a medium frying pan over medium-high heat and melt the butter. As the last of the butter is melting, add the beaten eggs. Stir and scramble until the eggs are set but still moist. Remove from heat.

Make the nachos:

Place the chips on an aluminum foil-lined oven-safe plate or cookie sheet. Top with half of the cheese. Place under 450 degree broiler until cheese starts to melt - about 1 minute. Top with scrambled eggs and remaining cheese. Broil 1 or 2 more minutes until all cheese is melted.

Serving them up:

Carefully... use the aluminum foil to slide the nachos onto a serving platter. Top with diced tomatoes, black olives and chopped jalapeno. Garnish with green onion. Serve with salsa and sour cream on the side.


Once you've had breakfast nachos, regular nachos will always feel like they're missing scrambled eggs. This recipe is very filling and fairly easy. Great to share while watching football on Sunday morning.
