All-In-One Breakfast Casserole

Melt Velveeta cheese and milk together in microwave and mix to make sauce.
Beat together eggs and milk.
Heat oven to 350 F. In a casserole dish or 9x9 baking dish, grease bottom and sided with butter or oil. Layer potato cakes (squishing together to completely cover), bacon, part of cheese sauce, potato cakes, more cheese sauce and then eggs over top, making sure they spread even over all.
Bake for 15-20 mins or until eggs are set. Sprinkle top with shredded cheese or more sauce if any left over and chopped tomatoes if desired. Serve warm.
Diced tomatoes and avocado over top make this colorful and add a few more vegies to the mix. Carbs, protein, dairy and vegetables. Now all you need is a half a grapefruit of some other fruit and it is a rounded meal!
