Buttermilk Griddle Cakes (Celebrity Recipe)

  • 1 cup buttermilk
  • 1/2 cup sweet cream
  • 1 egg - well beaten
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 Tablespoon melted butter
  • 2 Tablespoons granulated cornmeal
  • 2 cups all-purpose flour
Mix ingredients in order given. Drop by spoonfuls on a greased hot griddle. Cook on one side and when puffed, full of bubble and well cooked on edges, turn and cook on other side.

Serve with butter and maple syrup. Griddle cakes made from buttermilk have an unusually good flavor and are tenderer than those made from plain milk or water.

Too thick - needed more milk. Should also add vanilla as it needs more flavor. Was alright.

Didn't have sweet cream so used a full cup and a half of buttermilk. Also added vanilla. Came out good. Next time, I'd skip cornmeal. Not really sure what that added. Overall: okay.

These have a great flavor. The batter was thick but cooked up light, next time I would try adding 1/2 cup less flour and see how that works.
