(This is a surprisingly easy and effective way to toast nuts. Depending on your microwave, you may want to check them after 50 seconds to make sure your nuts don't burn (no joke implied)).
Stir the oats, brown sugar, cinnamon and wheat germ (if using) into the baking pan. Drizzle with honey. Stir until everything is sticky and well combined.
Transfer half of this mixture to bowl and set aside.
Microwave mixture in the baking pan for a total of 4 minutes - stirring after every minute.
(When stirring the granola, pat the mixture into the pan with the back of a spoon and then stir. This will help create a few clusters of granola.)
Transfer cooked granola to a plate or a flat pan to cool.
Repeat cooking instructions for the mixture that you set aside.
Add the second batch of cooked granola to the first and stir in dried fruit.
Allow granola to cool completely before eating or storing. Stored granola will keep for 5 days in an airtight container.
(Definitely let this granola cool before serving. Unlike similar oven recipes, this granola needs to set before it feels crisp.)
