Mother's Day French Toast

  • 5 large eggs
  • 1/2 cup milk
  • 2 Tablespoons cinnamon
  • Texas toast-style bread (homemade is much better)
  • strawberries
  • pineapple
  • 1 box cream cheese
  • 2 teaspoons vanilla
  • 2 cup powder sugar
In a bowl mix together eggs, 1/4 cup milk, 1 tsp vanilla and cinnamon. Beat until well mixed. Dip bread in egg mixture and cook on hot griddle (instead of using Pam to spray the pan so it doesn't stick, use butter, it gives it a better flavor) cook on both sides till golden brown.

In another bowl have strawberries/pineapple cut up and mashed till desired cut.

In a separate bowl cream together cream cheese (at room temp), 1 tsp vanilla, 1/4 cup milk and powder sugar till its light and creamy. When the bread is nice and golden spread the cream cheese on while still warm, top with another piece of bread more cream cheese and fresh fruit! ENJOY!


This is what I make for my mom and my entire family on Mother's Day. The fresh fruit and the creaminess of the cream cheese makes it taste very special.
