Fruit Salad Breakfast With Vanilla Honey Yogurt

  • 2 cups plain yogurt
  • 1/2 teaspoon vanilla
  • 2 Tablespoons honey
  • seeds of 1/2 of a vanilla bean
  • 1 oranges - cut into segments
  • 1 banana - cut into coins
  • 10 strawberries - de-stemmed and halved
  • fresh raspberries - to taste
  • blueberries - to taste
  • 1/2 cup green seedless grapes - halved
Fruit Salad Breakfast With Vanilla Honey Yogurt
In a large bowl, mix together the yogurt, vanilla, honey and vanilla bean seeds.

In a separate large bowl, combine all of the fruits. (If not serving immediately, squeeze the juice from one of the orange segments over the banana slices to prevent them from browning.)

Place servings of fruit in serving bowls or parfait glasses and top each serving with vanilla honey yogurt. If using parfait glasses, try alternating layers of fruit and topping for a nice presentation.

The honey vanilla yogurt topping is also a wonderful topping for granola in the morning. Granola is also a great addition to the recipe if you'd like a little crunch with your fruit. Try experimenting with other fresh fruits too!

This recipe is wonderful! Especially for me, as I am a throat cancer a patient and have trouble swallowing lots of regular foods. Radiation did a number on me regarding scar tissue and the routing of my food & drink. Recipes like this one are wonderful for me and go down easily. I wish I could get some really smooth dinner recipes using veggies (no meat). Ina, I watch you all the time and I think you would be able to come up with really good, smoother lunch and dinner recipes for me. I just love ya! Have to add... I have never smoked a day in my life... doctors said second-hand smoke or what we all breathe in every day could have caused it... they don't really know... I was stage IV, very, very advanced. BUT, God is in charge and left me here for a reason. I am thankful to HIM for my life! And the doctors also - they were HIS vessels! LB
