Peanut Butter, Banana & Bacon Granola Bars

  • 2 and 1/2 cups old-fashioned or quick-cooking rolled oats
  • 1/3 cup sunflower seeds
  • 1/2 cup sliced or slivered almonds
  • 1/3 cup wheat germ
  • 1/2 cup honey or maple syrup
  • 1/4 cup dark brown sugar (packed)
  • 2 Tablespoons butter
  • 1 teaspoons vanilla extract
  • 1 cup dried banana chips - crumbled
  • 10 slices of bacon - cooked crisp and crumbled
  • 3/4 cup crunchy peanut butter
  • 1/2 cup raisins or other dried fruit - optional
  • 2 Tablespoons flax seeds - optional
Grease a 9x13 baking dish with butter or a generous coating of cooking spray.

Preheat oven to 350 degrees.

In a separate large baking dish, combine the oats, sunflower seeds, almond slivers and wheat germ. Mix well. Place in oven and toast for 15 minutes - stirring every 4 minutes.

In a sauce pan over medium-low heat, combine the brown sugar, butter, vanilla, salt and peanut butter. Cook - stirring often - until the brown sugar dissolves and the mixture is well combined.

Once the dry ingredients are toasted, remove them from the oven. Reduce oven temperature to 300 degrees.

Pour the hot wet mixture over the toasted mixture. While mixing, also add the crumbled banana chips, crumbled bacon and, if desired, raisins or other dried fruit and flax seeds.

Transfer this mixture to prepared 9x13 baking dish. Press the mixture into the dish with the spatula to make a packed, even layer.

Bake for 25 minutes or until golden brown.

Allow dish to cool at least 15 minutes before cutting into individual bars.

Store granola bars in an airtight container and they'll keep for a week.


I had several people try these bars. The response was great, but a couple people thought the bars would be better with more salt (than that provided by the bacon). If you like a saltier granola bar, I recommend adding 3/4 teaspoon of salt to the wet ingredients in this recipe.

I thought it was plenty salty without having to add more salt. We made it without the banana chips or wheat germ. Also added raisins. Thought it was pretty cool. If anything it could have used more bacon.
