  • 4 large eggs
  • 2 medium onions
  • 2 Tablespoons green coriander - chopped
  • 2 green chillies - chopped
  • 1 tomato - chopped
  • 1 and 1/2 teaspoons salt
  • 3 Tablespoons clarified butter
Heat oil or ghee and fry onion in it till soft but not brown. Remove excess oil.

Add coriander, chillies and tomato and mix well. Cook for 3 minutes. Remove pan from fire.

Break eggs into a bowl and beat a few strokes until whites and yolks are well blended.

Add to onion mixture and mix well.

Add salt.

Return pan to fire and cook slowly - stirring all the time - until the mixture is the consistency of soft scrambled eggs.
