Creamed Eggs Made Easy

  • 4 hard boiled eggs
  • 2 Tablespoons flour
  • 1 cup milk
  • 1 slice American cheese (ie. sandwich slice)
  • 1 teaspoon Old Bay seasoning
  • salt and pepper - to taste
  • 4 pieces toast or 2 whole English muffins
Mix flour and milk together well, then add to med or med/low heated pan... then add slice of cheese... let it gradually... gradually... thicken... say 2 to 4 minutes... do not overheat ( stir occasionally).

After thickened, add hard boiled eggs (run thru egg slicer 1 time and then cut in half )... warm mixture thru for approx 2 minutes... pour over toast or muffins... sprinkle on old bay seasoning!

Variations to try: 1) switch Swiss or Pepper Jack cheese for American cheese. 2) switch dill weed for Old Bay seasoning. 3) add Tablespoon white wine and cook a bit longer.


The EASY method as their is no RUE to mess up... you just need some patience while thickening.
