Fig Bran Muffins

Fig Bran Muffins
  • 1 cup chopped dried figs plus 3 whole dried figs
  • 1 and 1/2 cups bran cereal (like All-Bran)
  • 1 cup lowfat milk
  • 1 and 1/2 cups whole-wheat flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup applesauce
  • 1/2 cup honey
  • 1/3 cup canola oil
  • 2 Tablespoons molasses
  • 1 large egg - beaten
Preheat oven to 400 degrees.

Coat a 12 cup muffin tin with cooking spray. Slice each of the 3 whole figs into 4 thin slices.

In a large bowl, combine the cereal and milk. Let this sit 5 minutes until the cereal is softened. Meanwhile, whisk together (or sift together) the whole-wheat flour, baking powder and salt in a separate bowl.

Add the applesauce, honey, oil, molasses and beaten egg to the cereal and milk. Stir until combined. Add the flour mixture and stir until just combined. Fold in the chopped figs.

Spoon the batter into the prepared muffin tin and top each muffin with a single fig slice.

Bake for about 20 minutes or until a toothpick inserted in center of a muffins comes out clean.

Allow muffins to cool at least 15 minutes before serving.


A healthy low-fat muffin with bran cereal and figs as the main ingredients.
