Vegan Donut Holes

  • 1 cup almonds - soaked and air-dried
  • 1/4 teaspoon salt
  • the seeds and inner-scrapings of 1/2 of a vanilla bean
  • 1 cup dried pineapple - chopped
  • 1 cup pitted dates (any kind of soft date)
  • 3 Tablespoons shredded coconut
  • 2 Tablespoons additional shredded coconut (in a small bowl) - for rolling
This recipe makes about 8 donut holes.

Place almonds with the salt in a food processor and process until almonds are coarsely chopped.

In a medium bowl, combine the dates, pineapple, 3 Tablespoons shredded coconut and vanilla bean seeds. Mix these ingredients together with your hands. Once this mixture is well-combined, add the almonds and continue to mix by hand until nuts are incorporated.

Working in small handful portions, roll the mixture into several donut hole sized balls. Roll each ball in the additional coconut.


A healthy donut that requires no baking? Sort of! Definitely one of the healthiest "donuts" you'll ever find.
