Sweet Potato Waffles(4 servings) Printable Version
Sweet Potato Waffles
In a large bowl, whisk together flour, baking powder, and salt. In separate bowl mix together the sweet potatoes, milk, brown sugar, butter, and grated orange rind. Stir the sweet potato mixture into the flour mixture and mix well. Beat the egg whites until stiff peaks form. Gradually fold the egg whites into the batter. Cook according to the directions for your particular waffle maker. These waffles will generally take 5 to 6 minutes to cook. Have a great breakfast!!! Here's the thing - I don't know what to do with 6 leftover yolks and I like that waffles are a one bowl dish so I just added three whole eggs and it seemed to turn out just fine.
