Spicy Scramble

  • 4 large eggs
  • white onion (diced)- 1/4 medium
  • red pepper (diced) - 1/3 medium
  • orange pepper (diced) - 1/3 medium
  • ham (diced) - 3/4 cup
  • salsa - extra hot - adjust to your liking
  • shredded low fat Mexican cheese mixture - adjust to your liking
Prepare the ham and veggies before you begin cooking. Apply either extra virgin olive oil or a cooking spray to a frying pan.

Turn stove to low to medium heat. Add the onions, peppers, and ham to the pan. Let ingredients cook together for a few minutes.

While these ingredients are cooking, scramble the eggs in a bowl. Add the eggs to the pan when ham, onions, peppers are sauteed nicely.

Cook slowly to your preference. Add the cheese and when melted to your liking take off the heat. Once on your plate, add the salsa.


To garnish, consider topping with crumbled corn chips or French's french fried onions.

Tasty but not really that spicy. Needs jalapeno or another hot pepper.
