Jammy French Toast

  • 2 eggs
  • 1/2 cup milk
  • 4 slices of bread
  • 2 Tablespoons shortening
  • your favorite jam
Break eggs into a bowl. Add milk and beat with an egg beater.

Dip bread into egg mixture and soak well.

Grease fry pan. Place bread slices in fry pan and brown one side over medium heat.

When browned, turn to other side using a pancake turner. Spread jam evenly over each bread slice and let cook until bread is browned.

This is from the chapter titled "How To Cook Eggs" in Buffy's Cookbook. Note from MrBreakfast: Instead of shortening, you could use butter or just a generous coating of cooking spray. No offense to Buffy, but I'd also recommend 1/4 teaspoon of vanilla and 2 teaspoons of sugar to the batter for a bit more flavor.
