Scottish Pancakes

Scottish Pancakes

(4 servings)    Printable Version
  • 1 and 1/2 cups regular or quick-cooking rolled oats (uncooked)
  • 2 cups buttermilk
  • 1 and 1/2 teaspoon sugar
  • 1 teaspoon baking soda (well-rounded)
  • 1 teaspoon salt
  • 1/2 cup flour
  • 2 eggs
Mix the oats and the buttermilk; let stand 5 minutes. Add the remaining ingredients to the mixture and blend with a whisk until it is relatively smooth. Since this is a fairly thin batter, it can be poured onto the griddle.

For cooking the pancakes, the author instructs:

The easiest way to prepare pancakes is either on an electric griddle or an electric frying pan... Otherwise, use a large 10- or 12-inch heavy frying pan (set to medium-high heat). The griddle or pan should be greased with 1 1/2 to 2 Tablespoons of vegetable oil. The batter can either be poured onto the griddle from a pitcher or dropped from a Tablespoon...

After you have the batter in the pan, wait for bubbles to cover the top of each pancake... check to see if the underside is browned... if it is, turn the pancakes over to brown the other side.

This recipe is from the classic cookbook titled Sunday Breakfast: A Cookbook For Men (Craig Michaels, Nitty Gritty Productions, 1971).

According to the "Man to Man" preface to this pretty cool book, "Grab you're chef's hat... Man to man, you'll be glad that you did."

Illustrations by Craig Torlucci.

The introduction to this recipe from the book Sunday Breakfast: A Cookbook For Men goes like this: "Put on your kilt, get out the bagpipes, and treat your family to this treat from abroad."

I love the texture! (I would use less salt.)
