Phantom Eggs

Phantom Eggs

(5 servings)    Printable Version
  • 5 eggs
  • 1 can undiluted tomato soup
  • 1/2 cup buttered bread crumbs (melt 2 Tablespoons of butter and mix crumbs into the butter until they are covered)
Place the eggs in a sauce pan and cover with cold water. When the water comes to a boil, lower heat and simmer for 15 minutes. Let the hard-boiled eggs stand in cold water for a few minutes, and peel them. Slice each into 5 or 6 pieces.

Heat the oven to 400 degrees.

Rub the bottom and sides of a baking dish with softened butter or margarine. Cover the bottom of the dish with egg slices. Spoon tomato soup over the egg slices. Make layers of egg slices covered with soup until you have used up the eggs. Spread buttered bread crumbs on the top of the dish. Bake for 20 minutes.

This recipe is from the classic cookbook titled The Nancy Drew Cookbook (Carolyne Keene, Grosset & Dunlap, 1973).

This cookbook is subtitled, "Clues to Good Cooking." According to the introduction, "How can you become a really good cook? 'It's no mystery,' Nancy Drew reveals, 'You must do what fine cooks have always done - add your own special touch.'"

"How do you do this? Let Nancy show you how. Who would be more intrigued to be an adventurer in cooking than a girl who loves to solve mysteries!"

This recipe also includes Nancy's Nutrition Hint: "At times Nancy chops 2 Tablespoons of green pepper and sprinkles some over each layer of eggs and soup. This adds color as well as vitamin C."
