Eggs Orange

  • 4 eggs
  • 3 Tablespoons butter
  • 1 Tablespoon frozen orange juice concentrate
  • 1/4 teaspoon seasoned salt
  • 1/2 teaspoon parsley
  • 2 English muffins - split and toasted
Fry eggs gently in 2 Tablespoons butter in skillet. Remove eggs and keep hot (on oven-safe plate in oven set to 250 degrees).

Add remaining butter and brown. Add orange juice, slowly so it does not splatter, seasoned salt, and parsley. Heat. Put eggs on English muffin. Pour 1 Tablespoon sauce over each egg.

In The Mike Douglas Cookbook, this dish is called "Skitch Henderson's Eggs Orange". Skitch Henderson was a conductor, composer and pianist. He was the original bandleader for NBC's The Tonight Show.

I didn't have frozen concentrate so I used 4 times the amount of OJ with fresh extra pulp juice and simmered the sauce until it was thick.
