Healthy N' Happy Honeyed Oats

  • 1.5 cups rolled oats
  • 2 Tbsp sunflower seeds
  • 4 Tbsp sliced almonds
  • 2 Tbsp chopped pecans
  • 2 Tbsp raisins or dried fruit of choice
  • 4 tsp honey
  • 1/4 tsp cinnamon
  • 1/4 tsp maple extract
Mix honey, cinnamon, and extract together in small bowl placed over a pot of hot/boiling water (this makes the honey easier to stir).

Stir together dry ingredients on a foil lined sheet (but NOT raisins!), then use your hands to stir in honey mixture.

Bake on sheet pan for about 15 minutes in a 325 degree oven, stirring once or twice during cooking. When it's ready it will be just barely tanned and it will smell really good!

(It will not be crispy until after it cools.)

As soon as you take it out of the oven stir in the dried fruit and let cool. I store mine in an airtight container in the pantry where it's cool, and I don't know how long it lasts because I eat it too quick!

There is fat in this recipe; in fact, 18% of it is fat. But unsaturated fats sourced from nuts and whole grains aren't an enemy.

I multiple this recipe by 4 and add about 1/3 cup golden flax seeds then use vanilla extract instead of maple. I also add dried cranberries in addition to the raisins. This is what I eat EVERY day! I have given this out to more people than I can count! Thank you!

This is absolutely delicious. I didn't have maple extract so I used vanilla extract. It smells great and taste very yummy.
