Potato Basil Scramble

  • 2 cups cubed potatoes
  • 1 small onion - diced
  • 1/2 medium green pepper - diced
  • 1 Tablespoon vegetable or canola oil
  • 8 large eggs - beaten
  • 2 Tablespoons minced fresh basil
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne pepper (optional)
  • black pepper - to taste
Place the cubed potatoes in a large microwave-safe bowl. Add 1/2 cup water. Cover and microwave on high for 7 minutes until the potatoes are tender - stirring the potatoes around once midway through the cooking time. Allow the potatoes to cool enough to handle. Drain them thoroughly.

In a large skillet over medium-high heat, saute the potatoes, onion and green pepper in the oil until the green pepper pieces are tender, the onion is translucent and the potatoes are nicely browned.

Add the eggs, basil and other spices and cook and scramble until the egg is completely set.

Serve immediately.


The ingredients can be adjusted to your tastes. I've made this using a single potato and two peppers (red and green) and no onion and it worked fine that way too. Enjoy!
