Combine eggs, salt, dry mustard, pepper, carrot and 1/2 cup cheese in medium bowl. Pour over potatoes. Cover; cook for 12 to 15 minutes or until center is almost set. Sprinkle with remaining cheese and bacon bits. Remove from heat. Cover; let stand until cheese is melted (2 to 3 minutes). To serve, cut into 4 wedges. Sprinkle with chives, if desired. *Substitute 2 cups refrigerated real egg white product if desired. TIP: Imitation bacon bits are smoky and salty tasting just like real bacon, but are made from soy protein and do not contain animal products.
