Iron Skillet Almond Coffeecake

  • 3/4 cup butter - melted
  • 1 and 1/2 cups sugar
  • 2 large eggs - lightly beaten
  • 1 teaspoon almond flavoring
  • 1 and 1/2 cups all-purpose flour - sifted
  • 1/4 teaspoon salt
  • 1/3 cup chopped raisins or other dried fruit - optional
  • 1/3 cup almonds - sliced
  • 1/3 cup additional sugar
Preheat oven to 350 degrees.

In a large mixing bowl, combine the sugar and melted butter. Gradually stir in the beaten eggs. Stir in the the almond flavoring.

Gradually stir in the flour and salt. If adding dried fruit, fold it into the batter now.

Pour batter into a greased OVEN-SAFE skillet. Combine the sliced almonds and additional 1/3 cup sugar in a cup or bowl. Sprinkle this mixture over the batter.

Cover the skillet completely with aluminum foil. Bake for 35 minutes or until a toothpick inserted into the center comes out dry.


Easy to make. Best of all, it uses ingredients I usually have around the kitchen, so I can make it any time.
