Apple-Pecan French Toast

Apple-Pecan French Toast

(6 servings)    Printable Version
  • Non-stick cooking spray or melted butter
  • 4 eggs
  • 1/4 cup sugar
  • 1/4 teaspoon cinnamon
  • milk (see comments below)
  • 1 medium apple -- pared and shredded
  • 1/2 teaspoon vanilla extract
  • 1 loaf French bread cut into 12 1-inch slices
  • 1/2 cup chopped pecans
  • 2 tablespoons melted butter
  • Maple syrup
Coat the bottom of a 13x9-inch glass baking dish with cooking spray or melted butter.

Combine eggs, milk, sugar, cinnamon, apple and vanilla. Place bread in a single layer in dish. Pour egg mixture over bread, turning to coat both sides. Cover with plastic wrap and refrigerate overnight.

The next morning, preheat oven to 425. Sprinkle pecans over bread slices and drizzle with melted butter. Bake 20 to 25 minutes or until puffy.

Because this recipe is made the night before, it's good for lazy weekend mornings or when hosting overnight guests.

Recipe Rating (out of 5):

Milk was not listed as one of the ingredients. When it came down to the directions, milk was supposed to be combined with eggs, sugar, cinnamon, apple and vanilla. I was confused and didn't know how much milk I was supposed to use. Fortunately, my guess was accurate. As a result, this recipe was very good. My husband and I enjoyed it.
