Sugar-Free Blueberry-Banana Whole Wheat Pancakes

  • 1 cup whole wheat
  • 1 cup milk
  • 1/2 cup canola oil
  • 1/2 cup milk
  • 4 teaspoons baking powder
  • 2 large eggs
  • 1 banana - peeled
  • 1 cup blueberries
  • cooking spray
Blend whole wheat and milk in blender for 4 minutes and then add all the other ingredients (EXCEPT blueberries) and blend 4 more minutes. Let sit for 2 minutes. Grease hot griddle with cooking spray. Pour 1/4 cup of batter for each pancake on hot griddle and place blueberries on each cake as fast as possible. Flip when golden (approx 1-2 min) and cook on other side for 1 minute longer.

*May need to thin the batter with a little milk if too thick.


The banana adds all the sweetness you need. Great for diabetics like my dad. I hope you like it as much as us.

They were tasty, but pretty wattery so I added more flour and stick to 1/4 a cup for pancake size or they will burn. I added vanilla for extra taste.
