Picante Breakfast Quiche

Picante Breakfast Quiche

(6 servings)    Printable Version
  • 1 9-inch frozen pie crust
  • 1 cup shredded Cheddar cheese
  • 2 medium green onions - chopped
  • 5 slices of bacon - cooked and crumbled
  • 3 large eggs
  • 1/2 cup Picante sauce (like Pace brand)
  • 1/2 cup half-and-half (milk will work in a pinch)
Pre-heat the oven to 375 degrees. If the directions on the pie crust direct you, pre-bake the crust for a couple minutes.

Spread the cheese evenly over the bottom of the pie crust, followed by an even layer of crumbled bacon and chopped onion.

In a medium bowl, beat the eggs with the Picante sauce and the half-and-half. Pour this mixture over the ingredients in the pie crust.

Bake for 35 minutes or until a knife inserted into the center comes out clean.

Let the quiche stand at least 10 minutes before serving.

Slice and serve warm.

I'll eat just about anything in a pie crust, but this South Western flavored dish is one of my favorites. Enjoy!
