Fruity Couscous

Fruity Couscous

(2 servings)    Printable Version
  • 1 cup apple and blackcurrant juice
  • 1/2 cup couscous
  • 1 cup chopped fruit (bananna / kiwifruit / pear / peach / berries / mango / etc. - anything soft will do)
  • strawberry or vanilla yoghurt
1. Place juice in a saucepan and bring to the boil.

2. Place couscous in the saucepan and stir constantly until juice is all absorbed.

3. Take saucepan off the heat and mix in fruit.

4. Serve into bowls with a dollop of yoghurt on top.

5. Enjoy!!
