Blenty of Blintzes Bake

BATTER:
1/2 cup softened butter
3 T. sugar
2 eggs
3/4 c. milk
1 tsp. baking powder
1-1/4 cup flour
FILLING:
1 16-oz small curd Cottage Cheese
2 T. softened butter
1 egg
1 T. sour cream
1/2 tsp Salt

Mix together batter ingredients til blended. Place half of the batter in a greased 9"x9" baking pan.

Mix filling ingredients to blend. Add all of filling to baking dish on top of batter. Cover this with remaining 1/2 of batter mixture.

Bake in a 350 deg. F. over for 50 min. til golden brown.
Serve hot with sour cream, jam, and/or berries on the side.

This is a wonderful, easy dish which emulates the taste of Blintzes, without all the work. Great for breakfast, Brunch, or Blunch.
