U.K. Breakfast Muffins

  • 75g unsalted butter
  • 250g self raising flour
  • 20g groung almonds
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon baking powder
  • 75g caster sugar
  • zest of 1/2 an orange(optional)
  • 100ml freshly sqeezed orange juice
  • 100ml milk
  • 1 egg
Melt the butter and leave to cool. Put all of the dry into a large bowl and give a quick stir. Then, in another bowl, mix the milk, orange juice and beat in the egg.

Then add the cool butter and add the liquid ingredients to the dry ingredients and stir to combine. Spoon the mixture into a muffin tray lined with paper cases and then into a 200'c oven and cook for twenty minutes.


Remember, the lumpiest batter makes the best muffins so only mix the ingredients until they are combined, not smooth.
