Golden Quesadillas

  • 1 dozen flour tortillas
  • 1 Tablespoon powdered garlic
  • 1 cup Monterey Jack cheese - shredded
  • 1 stick butter
  • salsa (and jalapeno rings) as desired
Heat griddle or fry pan at medium heat. Melt 1 Tablespoon butter. Sprinkle preferred amount of powdered garlic around surface. Place tortilla on surface, sprinkle handful of cheese. Cover with second tortilla. Do not flip over until you see that the bottom is golden brown. Add more butter if necessary (nobody should be looking for a low-calorie item here!).

It should take about 4 to 5 minutes. Repeat (butter and garlic), then flip over.

Serve hot with salsa and jalapeno rings if desired. It also makes a great side dish for egg dishes.

All I can say is after you eat these, the regular quesadillas recipes seem very bland and dry. Here, the warm aroma of garlic and butter fill the kitchen. And the first taste on your tongue is that lovely taste, then the slightly crunchy tortillas ooze with melted Monterey Jack. Just try it and let me know what you think. Any other ideas of how to improve on it are definitely welcome! It's easy, but each serving takes about 8-10 minutes to do well. I would NOT speed it up with a broiler or microwave - sometimes, good things just take longer.



Cut these into wedges and serve with scrambled eggs. They're a little crispy so you can use them like toast - deluxe, cheese-filled Mexican toast.
