Spicy Omelet Bake

  • 6 large eggs
  • 2 Tablespoons milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup cooked ham - diced
  • 1 small can (10 ounce) can diced tomatoes and chiles (like Rotel)
  • 8 ounces shredded jack or cheddar cheese - or combination of the two
Preheat oven to 400 degrees F.

Prepare an 8 1/2 x 8 1/2 in baking dish with a light coating of cooking spray.

In a medium bowl, beat the eggs with the milk, salt and pepper until foamy. Mix in the ham, diced tomatoes and cheese and mix well. Pour into prepared pan.

Bake for 25-30 minutes until eggs are set.

Let set for 10 minutes before serving.


If you like, add a little more shredded cheese to the top of the dish right after you remove it from the oven. Enjoy!

This was very good. We only had about the half the amount of ham from leftovers, but it was still tasty.
