Diabetic Applesauce Pancakes

  • 1/2 cup applesauce (no sugar added)
  • 1 slice white enriched bread - crumbled
  • 1/2 cup cottage cheese
  • 2 teaspoons Splenda
  • 1 dash cinnamon
Place the bread crumbs, cottage cheese, Splenda, and 2 tablespoons in the blender. Process until smooth. Drop by tablespoons on a hot non-stick skillet. Cook until brown on both sides. Serve with remaining applesauce as a topping.


This interesting 5 ingredient pancake is comprised of bread crumbs, applesauce, sugar substitute, cottage cheese and cinnamon.
