Green Pepper Scramble

  • 4 large eggs - lightly beaten
  • 1 large green pepper - chopped into 1 inch strips
  • 1 small onion - chopped
  • 1 clove fresh garlic - minced
  • 1 Tablespoon olive oil
  • salt and pepper to taste
  • salsa (optional)
Heat the olive oil in a large skillet over medium-high heat. Add garlic, onion and green pepper. Stirring frequently, fry until peppers are tender and onion is translucient.

Add the beaten eggs and spices. When eggs begin to set, stir and scramble until the eggs are completely set.

Serve warm topped with your favorite salsa.


I like this recipe made with egg-beaters and a sprinkle of cheese if I have any handy.

The flavor is good, but you will need to bump it up a bit. Also, the pan gets hot quickly when sauteing the onions and green peppers, so consider doing this the night before, or use two pans.
