Macadamia Nut Waffles

  • 2 cups cake flour
  • 1 cup milk
  • 1/3 cup sugar
  • 1/4 cup macadamia nuts - finely chopped
  • 1/4 cup heavy cream
  • 2 large eggs - separated
  • 6 Tablespoons butter - melted
  • 3 teaspoons baking powder
  • 1 teaspoon almond extract
  • 1/2 teaspoon salt
In a small bowl, beat egg whites until stiff peaks form. Set aside.

In a medium bowl, beat egg yolks. Add milk, cream and almond extract and mix.

In a third bowl, sift together the flour, sugar, baking powder and salt.

Combine egg yolk mixture, flour mixture and melted butter and mix well. Gently fold in egg whites.

Bake in heated, greased waffle iron according to manufacturer's directions.

Serve with maple syrup or other favorite topping.


I like these Hawaiian-style with powdered sugar, pineapple chunks and - believe it or not - crumbled bacon. Don't call me crazy until you try it.

I made them with almonds because I didn't have any macadamia nuts. Very good!

I am looking for a waffle similar to this. We had it in Hawaii and it had fresh kiwi, strawberries and bananas. It was topped with an Hawaiian fruit salsa and mac nuts. PLEASE help me get the recipes for the salsa!! Thanks.
