Italian Vegetable Strata

  • 2 cups Italian-style dried croutons
  • 2 cups shredded mozzarella cheese
  • 1 and 3/4 cups half & half
  • 1 cup shredded zucchini
  • 1 cup diced red bell pepper
  • 1/2 cup flour
  • 1/3 cup diced green onions
  • 1 can (14 ounces) diced tomatoes - drained
  • 8 large eggs
  • 1 teaspoon dried basil
  • 1 teaspoon salt
Preheat oven to 375. Prepare a 13x9 baking dish with cooking spray.

In the baking dish, layer the following items from the bottom-up: the croutons, 1/2 the cheese, all of the vegetables and then the other 1/2 of the cheese.

In a medium bowl, whisk the flour with the half and half. Add the eggs and spices and beat until mixed.

Pour the egg mixture over the layers in the baking dish.

Bake for 35 to 45 minutes until a toothpick inserted in center comes out clean.

Let it cool slightly before serving.


This is a pretty easy recipe to make something that seems kind of fancy. I've put a little marinara sauce on top before serving before and that was great! Buon appetito!
