Pumpkin Spice Muffins

  • 2 cups all-purpose flour
  • 1 cup brown sugar - packed
  • 1 cup raisins
  • 3/4 cup canned pumpkin puree
  • 2 large eggs - lightly beaten
  • 1/3 cup milk
  • 8 Tablespoons butter (1 stick) - softened
  • 1 and 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon baking soda
Preheat oven to 400 degrees. Prepare 12 muffin cups with papers or a generous coating of cooking spray.

In a large mixing bowl, combine flour, brown sugar, baking powder, cinnamon, ginger, cloves, salt and baking soda.

In a separate medium bowl, stir butter with pumpkin puree, eggs, milk and vanilla extract.

Add wet ingredients to dry ingredients and stir until just combined.

Stir in raisins. Spoon batter into muffin cups - filling each about 3/4 full.

Bake 20 to 25 minutes until a toothpick inserted into the center of muffin comes out clean.

Sort of like pumpkin bread in the form of a muffin. Skipped the ginger because I didn't have any, but stuck to the rest of the recipe. Very tasty and very moist. Would make it again.

Really good recipe. I changed it a little. I omitted the raisins (preference), used one egg instead of two, and I replaced half of the butter with 1/2 cup applesauce. They were still very moist, with less fat.
