![]() Corny Pepper Jack Frittata(2 servings) Printable Version
Spray nonstick ovenproof pan with cooking spray or use a paper towel to evenly distribute a small amount of oil. Pour a single layer of corn in bottom of pan and heat on low setting. While corn is cooking beat eggs and milk and shred or break apart cheese. When the corn starts to sizzle and appears to be fully heated pour in the eggs. Raise the heat to med-low. When you see the edges of the egg just start to lift from the sides of the pan, put an even layer of cheese over the top and transfer pan to the top rack of the oven. Broil on low watching carefully until the egg is cooked through and the cheese starts to bubble. Remove from oven and let stand a minute then slice into wedges. Serve with whole wheat toast and a glass of grapefruit juice. Salsa or avocado would taste good with this for lunch. Notes From Recipe Submitter: I didn't use any measurements while making this at home but my 12 year old sister totally loved it! Using organic ingredients is really important because they're healthier and have more flavor. All of my ingredients were from Trader Joe's and the cheese, corn, and milk were TJ's brand. Just make it to your taste - I don't recommend adding salt or pepper because the cheese is spicy and salty enough. A healthy, organic frittata that highlights corn and Pepper Jack cheese.
