Morning Pink Lemonade

  • 1/2 cup fresh-squeezed lemon juice (about 3 lemons)
  • 1 cup strawberries - washed and leaves trimmed
  • 1/2 cup sugar
  • 2 cups water
  • ice cubes (optional)
  • 4 fresh mint sprigs (optional)
Step 1:

In a blender or food processor, combine the lemon juice with the strawberries and sugar. Replace the lid and process the mixture on high until the strawberries are completely pureed.

Step 2:

If you do not like pulp in your drinks, pour the mixture through a strainer and press the pulp to squeeze out all the juice.

Step 3:

Add the strained or unstrained mixture into a pitcher. Pour in the water and stir until the mixture is completely blended.

Step 4:

Fill four 8-ounce cups with ice cubes. Pour the lemonade over the ice. Garnish the drinks with a sprig of mint (optional) and serve. If you like a little fizz in your drink, then use one cup of water with one cup of seltzer water.

I had this drink along with my big breakfast today. We eat a big breakfast everyday and it curbs our cravings all day. The theory to get sweets and carbs in the first meal and have just protein and veggies after. We have lost 5 pounds each after a month. Anyway, this drink was very sweet which surprised me since I make lemonade and can't get it sweet enough. So I guess the strawberries were sweeter than ever. I will make this again and add less sugar if needed. I might make this instead of plain lemonade from now on!
